In the culinary arts, the word “marbling” refers to white flecks and streaks of fat within the lean sections of meat. Marbling is so named because it gives to the meat a marble aspect. Also called intramuscular fat, marbling adds flavor and is one of the main criteria for judging the quality of cuts of meat. In general, the more marbling it contains, the better a cut of meat is. This said, we wanted to create a place where anybody could try out well-marbled meat cuts prepared with love by our cooking team.
Origin of the products
Elite Fresh Food, the mother company of Marbling, has been involved in the import and distribution of premium food products in Hong Kong and Macau for over 50 years. Elite Fresh Food has longstanding relationships with international producers and directly source meat, seafood and dairy products from all over the world. Elite is also the largest Japanese Wagyu beef importer in Hong Kong with a large panel of suppliers all around Japan. Thanks to our wide network and the quality of products sourced, Elite Fresh Food is able to supply the finest hotels and restaurants in Hong Kong but always reserves unique items for Marbling exclusive use.
Marbling is also among the few restaurants in Hong Kong to own a dry-aging room. We have a dedicated team in charge of monitoring the aging process on a daily basis to make sure our steaks develop this richer and beefier flavour.
In essence, we are able to deliver the finest to your table as we have control over the origin and quality of the products we prepare.
